The lunch box has come a long way over the years, as has the food inside.  

Carrying lunches started with the lunch pail, which was anything but stylish. They were used by working men, along with schoolchildren, back in the 1800’s.

Later, commercial baked goods became available in pretty tins which were then utilized for lunch boxes.  Soon tobacco companies hopped on board selling products designed to be reused as lunch boxes.

Manufacturers quickly realized that they could sell lunchboxes made just for kids and colorful boxes debuted around 1900.  The rest is history.

I remember my childhood lunch box, it was a blue plastic Smurf box and I loved it.  What kind of lunch box did you have?

Description

Fun dinner recipe perfect for sleepovers or lunch boxes!  These simple individual sized pizzas come together in under 10 minutes.


Ingredients

  • 2 mini naan bread
  • 1/2 cup pizza sauce
  • 1 tbsp. olive oil
  • 1 tsp. minced garlic
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh parmesan cheese, sliced
  • 1/4 cup sun-dried tomatoes
  • 1/4 cup arugula blend
  • 1 tsp. red pepper flakes

Instructions

Mediterranean Pizza:

  1. Brush naan bread with olive oil and minced garlic. Top with cheese and sun-dried tomatoes. Place arugula on top of the cheese. Add additional cheese and red pepper flakes if desired.

Pepperoni Pizza:

  1. Spread pizza sauce on naan bread. Sprinkle with cheese. Top with pepperoni and more cheese.

Veggie Pizza:

  1. Spread pizza sauce on naan bread, sprinkle with cheese.  Top with veggies and more cheese.

Notes

Pizza can be served cold, as it is just as tasty!
