There is nothing quite like a slice of homemade lasagna. It is a dish you shouldn’t have to miss out on just because you or a loved one is gluten-free. Follow our simple method of creating lasagna from scratch then serve with any side dish (check out our favorites below!).

Oven Ready Lasagna Noodles
Oven-ready lasagna noodles are such a game-changer. You can forget the days of boiling noodles before layering the lasagna with these easy to assemble noodles.
Simply remove from the box and layer. It is really that simple! The no-boil noodles then soften as the lasagna bakes soaking up all the outstanding flavors.

Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 pound ground pork sausage ✅
- 1 pound ground beef ✅
- 3-4 cloves garlic, minced
- 28 ounce crushed tomatoes ✅
- 2 (6) ounce tomato paste ✅
- 15-ounce tomato sauce ✅
- 1 tablespoon sugar
- 1 1/2 teaspoons salt, divided
- 1 teaspoon dried oregano ✅
- 1 teaspoon dried thyme ✅
- 1/2 teaspoon crushed red pepper ✅
- 15-ounce reduced-fat ricotta cheese ✅
- 2 large eggs
- 8 ounces gluten-free oven-ready lasagna noodles
- 16 ounces mozzarella cheese ✅
- 4 ounces six-cheese Italian or parmesan cheese ✅

How To Layer Lasagna
Preheat the oven to 375°F.
Sauté onions and garlic and brown the meat
Add olive oil to an extra-large skillet. Once heated, add the onions and cook for 2-3 minutes or until translucent. Stir in the garlic and cook for 1 minute. Add the pork sausage and ground beef. Cook until browned. Drain.
Add the tomatoes and spices
To the browned meat, add the crushed tomatoes, tomato paste, tomato sauce, sugar, oregano, thyme, crushed red pepper, and 1 teaspoon of salt. Stir well. Let simmer for 1 hour or at least 30 minutes.


Blend ricotta cheese and eggs
In a medium-sized bowl, blend together the ricotta cheese, eggs, and 1/2 teaspoon salt. Set aside.
Assemble the lasagna
Start by spreading 1 1/2 cups of the meat sauce into the bottom of the baking dish. Place 4-5 gluten free noodles over the meat sauce. Spread with 1/2 of the ricotta cheese mixture. Top with 1/3 of the mozzarella cheese.
Add another 1 1/2 cups meat sauce, gluten-free noodles, the rest of the ricotta, and 1/3 of the mozzarella cheese. Finish with the rest of the meat sauce, the rest of the mozzarella cheese along with the parmesan cheese.






Cover with tin foil and bake
Cover the lasagna with a piece of aluminum foil that has been sprayed with nonstick cooking spray (this helps keep the cheese from sticking to the foil). Bake for 25 minutes covered.
Remove the foil and bake an additional 20 minutes or until the cheese is bubbly and starting to brown. Let rest for 10 minutes before slicing.

Frequently Asked Questions
The ricotta cheese can easily be swapped 1:1 with cottage cheese. Instead of the 15-ounce ricotta, use 15-ounce cottage cheese and follow the instructions as written.
As with any recipe, the total cooking time will depend on your oven. If cooking in a 9×13 casserole dish, the lasagna will bake in approximately 45 minutes.
This recipe is great because it can be assembled a day in advance, covered with tin foil, stored in the fridge then baked the next day.
Once completely cool, store in the fridge for up to 3 days or in the freezer for up to 3 months. Baking a lasagna, slicing into portions then freezing is an excellent way to meal prep. Defrost individual portions in the microwave or thaw overnight then reheat in the oven for a quick and easy lunch or dinner meal.
