How To Make Gluten Free Lasagna
Preheat the oven to 375°F.
Add olive oil to an extra-large skillet. Once heated, add the onions and cook for 2-3 minutes or until translucent. Stir in the garlic and cook for 1 minute. Add the pork sausage and ground beef. Cook until browned. Drain.
To the browned meat, add the crushed tomatoes, tomato paste, tomato sauce, sugar, oregano, thyme, crushed red pepper, and 1 teaspoon of salt. Stir well. Let simmer for 1 hour or at least 30 minutes.
In a medium-sized bowl, blend together the ricotta cheese, eggs, and 1/2 teaspoon salt. Set aside.
Start by spreading 1 1/2 cups of the meat sauce into the bottom of the baking dish. Place 4-5 gluten free noodles over the meat sauce. Spread with 1/2 of the ricotta cheese mixture. Top with 1/3 of the mozzarella cheese.
Add another 1 1/2 cups meat sauce, gluten-free noodles, the rest of the ricotta, and 1/3 of the mozzarella cheese. Finish with the rest of the meat sauce, the rest of the mozzarella cheese along with the parmesan cheese.
Cover the lasagna with a piece of aluminum foil that has been sprayed with nonstick cooking spray (this helps keep the cheese from sticking to the foil). Bake for 25 minutes covered.
Remove the foil and bake an additional 20 minutes or until the cheese is bubbly and starting to brown. Let rest for 10 minutes before slicing.

Tips and Tricks
- Choosing Ingredients:
- When selecting ground meat, consider using a mixture of ground beef and Italian sausage for a more complex flavor.
- Opt for high-quality crushed tomatoes and tomato products for a richer sauce.
- Sautéing the Onions and Garlic:
- To enhance the flavor, sauté the diced onions and minced garlic in the olive oil until they are soft and translucent before adding the ground meat.
- Seasoning the Sauce:
- Taste your sauce as it simmers and adjust the seasonings to your preference. You can add more herbs, sugar, or salt as needed.
- Ricotta Cheese Mixture:
- Mix the ricotta cheese, eggs, and salt thoroughly to create a creamy and well-seasoned layer for your lasagna.
- Layering Lasagna:
- Start with a thin layer of meat sauce at the bottom of the baking dish to prevent sticking.
- Use no-boil gluten-free lasagna noodles for convenience. Make sure they are evenly layered to cook properly.
- Don’t forget to spread the ricotta mixture evenly over the noodles for a creamy layer.
- Layer the cheese evenly to ensure every bite has a delicious cheesy flavor.
- Covering and Baking:
- The foil covering is essential to prevent the lasagna from drying out. Make sure it’s sealed well around the edges to trap steam.
- Consider using non-stick cooking spray on the foil to prevent cheese from sticking.
- During the last 10 minutes of baking, you can remove the foil to allow the cheese to brown and develop a slightly crispy top.
- Resting Before Serving:
- Let the lasagna rest for about 10 minutes after taking it out of the oven. This allows the layers to set, making it easier to slice and serve neatly.
Frequently Asked Questions
The ricotta cheese can easily be swapped 1:1 with cottage cheese. Instead of the 15-ounce ricotta, use 15-ounce cottage cheese and follow the instructions as written.
As with any recipe, the total cooking time will depend on your oven. If cooking in a 9×13 casserole dish, the lasagna will bake in approximately 45 minutes.
This recipe is great because it can be assembled a day in advance, covered with tin foil, stored in the fridge then baked the next day.
Once completely cool, store in the fridge for up to 3 days or in the freezer for up to 3 months. Baking a lasagna, slicing into portions then freezing is an excellent way to meal prep. Defrost individual portions in the microwave or thaw overnight then reheat in the oven for a quick and easy lunch or dinner meal.
Storage Instructions
To store your lasagna properly, follow these steps. First, allow the lasagna to cool to room temperature. Once it’s cooled, cover the entire dish tightly with aluminum foil or plastic wrap, ensuring there are no exposed areas. This helps to prevent moisture loss and freezer burn. If you plan to consume it within the next two days, you can store it in the refrigerator.
For longer-term storage, place the covered dish in the freezer. To avoid the lasagna sticking to the foil or plastic wrap, you can also place a layer of parchment paper between the food and the covering. When you’re ready to enjoy it, simply reheat individual portions in the microwave or reheat the entire dish in the oven at a low temperature. Properly stored, lasagna can remain good in the freezer for up to three months.
