Selecting Gluten-Free Flour
When it comes to picking a gluten-free flour blend, we recommend selecting based on preference. We find trialing a variety of blends is the best way to find your favorite. This recipe was tested successfully with Bob’s Red Mill Gluten Free 1 to 1 Baking Flour. We also suggest picking a gluten-free flour blend that contains xanthan gum as this will add ease to baking.
Measuring Gluten-Free Flour
Instead of scooping the measuring cup into the bag of flour, use the spoon and sweep method for measuring. Use a spoon to scoop flour into the measuring cup and then a knife to level out the top of the measuring cup once full. This will provide an accurate amount of flour to prevent crumbly and dry cookies.
Check Labels
You will want to read the ingredients and be on the search for the certified gluten-free label prior to purchasing to ensure products are celiac safe. How To Make Cranberry Oatmeal Cookies
Preheat the oven to 350°F. Line the baking sheets with parchment paper.
Cream the coconut oil and sugar
Add the coconut oil, granulated sugar, and brown sugar to the mixing bowl. Beat for 2-3 minutes or until light and fluffy. Add the vanilla and eggs, blend until incorporated, scraping the sides if needed.


Add the dry ingredients
Add the gluten-free flour, baking soda, and salt and blend until combined. Add the oats.
Stir in the cranberries and chocolate chips
Add the craisins and chocolate chips, blending until combined.
Bake
Using a cookie scoop, place dough onto the trays. Bake for 10-12 minutes.
