Ingredients
- 1 cup granulated sugar
- 1/2 cup dairy-free butter
- 1 large egg
- 1 teaspoon vanilla extract ✅

- 1/2 cup almond flour
- 1/2 teaspoon baking powder ✅
- 1/4 teaspoon salt

How To Make
Preheat the oven. Preheat the oven to 350°F.
Blend the wet ingredients
To the mixer bowl add the sugar and butter. Whip until light and fluffy then add the egg and vanilla and blend until well combined.
Add the dry ingredients
To the bowl, add the gluten-free flour, almond flour, baking powder, and salt. Mix until blended.
Chill
Chill the dough for 30 minutes.
Bake
Using a cookie scoop or 2 spoons, divide the cookies onto the baking sheets. Bake for 10-11 minutes or until the edges start turning golden brown.
Let cool for 5 minutes before moving to a wire cooling rack to cool all the way.
