Boil the potatoes
Place the potatoes into the large stockpot and cover with cold water about 1 inch above the potatoes. Bring to a boil and cook for 15-20 minutes or until fork tender. Drain and let cool for at least 30 minutes.
Make the dressing
In a medium-sized mixing bowl combine the mayo, grated onion, celery, pickles, pickle juice, Dijon mustard, dill, salt, and pepper. Stir well.
Combine the potatoes and dressing
Add the dressing to the chilled potatoes and gently stir. Add 4 of the sliced eggs then combine.
Serve
Serve garnished with the additional egg slices on top of the potato salad. Keep refrigerated until serving.
Mix It Up: Green onions, bacon bits, and paprika also make great garnishes for potato salad.
