Add fruit to the mixing bowl
Start by adding the prepped fruit to a medium-sized mixing bowl. We use blueberries, strawberries and apples for a patriotic theme. From berries to melons, peaches to bananas, you can pick any fruit combination desired.
When choosing fruit for the salad, select ripe varieties without blemishes or bruises. The riper the fruit, the sweeter the salad. If chopping fruit, aim to cut each piece roughly the same size.
Make the dressing
Next, measure the pineapple juice in a liquid measuring cup. Then add the honey, pudding mix, and poppy seeds. Whisk until combined.
Ingredient Swap: Use orange juice, grapefruit juice or lemon juice in place of the pineapple juice.
Add dressing to salad
Pour the dressing onto the fruit medley. Gently mix until each piece of fruit is coated with the dressing. Serve immediately or store in the refrigerator until ready to serve.

The acidity from the pineapple juice will help prevent the fruit from turning brown. If serving this fruit medley without the dressing, toss fruits like apples in lemon juice prior to adding to the serving bowl.
