Our gluten-free potato salad is super creamy and absolutely delicious featuring Yukon Gold potatoes, celery, eggs, and pickles. It's a midwestern classic potato salad that will be the hit of your next gathering or potluck. Dairy-free.
⭐️Boil the potatoes. Place the potatoes into the large stockpot and cover with cold water about 1 inch above the potatoes. Bring to a boil and cook for 15-20 minutes or until fork-tender. Drain and let cool for at least 30 minutes.
2-3 pounds Yukon gold potatoes, peeled and diced
Make the dressing. In a medium-sized mixing bowl combine the mayo, grated onion, celery, pickles, pickle juice, mustard, dill, salt, and pepper. Stir well.

Combine the potatoes and dressing. Add the dressing to the chilled potatoes and gently stir. Add 4 of the sliced eggs then combine.

Serve. Serve garnished with the additional egg slices on top of the potato salad. Keep refrigerated until serving.

Omit hard-boiled eggs as an ingredient or serve on the side if you have guests with preferences for no egg.

Cooled potato salad is good for up to 3 days when stored in the refrigerator in an airtight container.
Boil potatoes for 15-20 minutes or until fork tender. To cook quicker, chop the potatoes into smaller chunks.
