How To Make Twice Baked Potatoes in Air Fryer
Prep the potatoes. Slice the Russett potatoes in half lengthwise. Using a spoon, carefully scoop the insides out of the potato, leaving a little on the skin for structure. Place the cooked potato into the medium-sized mixing bowl. Place the potato skins onto the air fryer pan.
Blend the mixture
To the bowl with the potatoes add the sour cream, butter, milk, 1/2 of the cheese, 3/4 of the chopped bacon, garlic, along with the salt and pepper. Mix well. Set aside.
Preheat the air fryer to 400°F
Place the pan with the potato skins into the air fryer and air fry for 6 minutes. Remove.
Fill the potato skins
Divide the potato mixture evenly among the potato skins. Top with the rest of the shredded cheese and bacon bits.
Cook
Air fry for about 5 minutes or until the cheese is melted and bubbly. Serve hot.

I love the idea of putting the potato skins back in the air fryer and crisping them up. Now that the family is down to just hubby and me it’s taking some getting used to smaller meals and this help portion control us instead of the big twice baked potato casserole that we tend to want eat more than we need to.
