It is called a “walking” taco because many times it is portable either being served directly in a bag of chips with a fork or poured into a larger bowl. If served in a bag, the ingredients are shaken to ensure all the flavors are distributed evenly.
The best part of walking tacos is they are a fun way to enjoy all the flavors of a taco without the need for plates.
This walking taco casserole recipe takes a different approach by layering all the ingredients into a casserole dish and letting it bake to perfection. You can then scoop and enjoy around the table or pour into a bowl if serving at an event where people are moving around.

Ingredients
- 1 pound lean ground beef
- 1 medium onion diced
- 1 packet gluten-free taco seasoning
- 3/4 cup water
- 15 ounces corn nuggets, drained
- 15 ounces black beans, rinsed
- 1 1/2 cups shredded Mexican cheese, divided
- 1 cup salsa
- 1/2 cup sour cream
- 9 1/4 ounce bag Fritos corn chips
- 1/2 cup shredded lettuce
- 1 Roma tomato diced
- 1/3 cup black olives

Recipe Instructions
Start by preheating the oven to 375°F.
Then, in a large skillet, add the ground beef with the diced onion. Use thawed ground beef for best results. Using a spatula, carefully break up the meat into large chunks. Let the chunks of beef cook for approximately 1 minute.
Then, break the chunks into smaller pieces and let cook for approximately 1 minute. Repeat the process of alternating between breaking up the ground beef and cooking for 1 minute until the ground beef is no longer pink.
Once cooked add the taco seasoning and water. Cook for 1 minute. Add the corn, black beans, 1 cup shredded cheese, and sour cream. Stir well.
Add half the bag of Fritos to the bottom of the pan. Layer the ground beef mixture on top of the chips then top with the rest of the Fritos and the shredded cheese. Cover with foil. The foil helps the casserole flavors to meld together without burning the cheese on top.
To prevent the foil from sticking to the cheese, spray the foil with nonstick cooking spray before placing on the baking dish.
Bake for 15 minutes or until the cheese has melted. Remove the foil then top with shredded lettuce, diced tomatoes, olives or family favorite taco toppings. Serve hot.
