Ingredients
- 3.4 ounce instant vanilla pudding mix
- 2 cups milk
- 14 ounce sweetened condensed milk
- fruit such as blueberries, strawberries, clementines, and green food coloring or spinach
How To Make
With 30 minutes and minimal ingredients, these popsicles will be ready to pop in the freezer. The hardest part will be patiently waiting for the pops to freeze!
Whisk the ingredients together
Start by combining the pudding mix, milk, and sweetened condensed milk in a large bowl. Then, whisk until combined.
Blend fruit into the pudding mixture for color
Add about 1/2 cup of the pudding mixture to a blender with a handful of blueberries for the purple base layer. Once blended, pour the purple layer into the popsicle molds.
Rinse the blender then add another 1/2 cup of the pudding mixture. Add a handful of strawberries for the pink layer and blend. Gently pour on top of the purple layer. You might notice that the colors blend in a bit – this is completely normal and makes for a fun design once frozen.
Repeat rinsing the blender and blending fruit using 1-2 clementine for orange, and spinach for green.
PRO TIP: You can also simply color the pudding mix with food coloring to layer without the fruit. A great option for anyone that doesn’t own a blender.
Freeze the popsicles
Place the sticks and covers onto to popsicle molds. Carefully place flat in the freezer. Freeze for 4-8 hours.
PRO TIP: To unmold, rinse under warm water (not hot) to loose the pops from the molds.
Frequently Asked Questions
For the base layer, blackberries or dark cherries can replace the blueberries. Raspberries or peaches can be used for the pink layer. Pineapple, banana, mango, grapefruit or apricots for the orange layer and kiwi or avocado for the green layer. You can also incorporate veggies such as kale, beets or carrots – simply blend into the pudding mix like you would the fruit.
Styrofoam or Dixie cups are two great DIY popsicle molds. Instead of wiggling the pops out of the cups, kids can easily tear the cups to reveal the popsicle.
Frozen popsicles that are homemade can be kept up to 3 months. For an easy storage method, remove from the mold once frozen and store flat in a ziplock bag.
