Ingredients
- 2 cups crushed Nila wafers
- 1/2 cup butter, melted
- 8 ounce cream cheese, room temperature
- 1 packet lemon pudding mix
- 1 cup milk
- 1 teaspoon vanilla extract
- cherry pie filling optional
How To Make
Prepare the crust
Start by crushing the Nila wafers. A kid-friendly way is placing the Nila wafers in a ziplock bag for kids to crumble together with their hands or roll over with a rolling pin to smash the wafers.
Add the melted butter to the wafers and mix well. Divide into mini muffin tins or pour into a 9×9 baking pan. Press firmly until the crust is compact in the tins or pan.
Blend
After the crust is ready to go, add the cream cheese, dry lemon pudding mix, milk, and vanilla to a large bowl. Using a hand mixer or stand mixer, mix until well blended, about 2 minutes.
Mix It Up: Swap the lemon pudding mix for vanilla, banana cream or chocolate fudge for a variety of cheesecake flavors.
Add cheesecake to crust
Add cheesecake mixture to mini muffin tin crusts or on top of the crust in the pan.
Freeze
Place the muffin tin or pan in the freezer for 2 hours. There is no need to cover the top of the tin or pan. After frozen, use a plastic knife to pop the bites out from the muffin tin.
If using a pan, go around the edges with a plastic knife and gently release it from the pan. Slice with a pizza cutter or large knife into bite-sized pieces.

Great recipe! I didn’t have lemon pudding, but I did have vanilla. I doubled the recipe, added the juice and the zest of one small lemon, which gave it the zing it needed. I plan to use these for our chocolate fountain. Yummmmmm!
