Ingredients
- 1 box vanilla cake, prepared per box instructions and cooled
- 2 cups powdered sugar
- 1/2 cup butter, softened
- 2 tablespoons water
- 1 teaspoon mint extract, optional
- 3-4 drops green food coloring
- 16 ounces white chocolate
- 1/4 cup St. Patricks Day Sprinkles optional: green sprinkles
How To Make Green Cake Pops
Prepare a baking sheet and cake pop stand. Prepare the baking sheet with parchment paper. Set aside.
Blend the frosting. Add powdered sugar, butter, water, and mint (if using), and food coloring to the bowl of your mixer. Blend on low until mixed, then turn to high and mix for 2 minutes, or until the icing is whipped and fluffy. Add more food coloring if you prefer a darker green.
Crumble cake, add to frosting. Crumble the cake into the mixing bowl with the frosting. Mix on low until completely combined.
Roll out the cake balls. Using a cookie scoop or spoon, scoop about 1 tablespoon of cake batter and roll it into a ball, and place onto the parchment-lined baking pan. Repeat until all batter is used.
Chill. Place the cake balls into the freezer for at least 30 minutes.
How To Melt Chocolate For Cake Pops
Melt the chocolate. Add the chocolate to a tall, skinny glass. Microwave for 30-second increments until melted, stirring every 30 seconds.
FUN FACT: Melting the chocolate in a tall, skinny glass makes dipping cake pops SO much easier.
How To Dip Cake Pops
Dip the cake balls. Dip the end of the cake pop stick into the melted chocolate. Push it halfway into the cake ball. Dip the cake ball into the melted chocolate then carefully remove and let the extra chocolate drip off. Place into cake pop stand.
PRO TIP: Dipping the end of the stick into the chocolate prior to adding the cake ball is key to getting the cake to stay on the stick.
Decorating Cake Pops
This is the fun part – you can keep things simple or be super creative. From edible glitter to food gel swirls, there are so many options for your kids to pick from. You will be amazed with their final creations!
We kept the decorating on the simpler side by adding St. Patrick’s Day sprinkles. These could also be swapped with green sugar or green sprinkles.
PRO TIP: Add the sprinkles to the cake pops right away before the chocolate sets to help the decorations stick.
