Learn how to make frozen cheesecake bites using just 6 ingredients. A no-bake cherry cheesecake made with a simple homemade Nila Wafer crust - enjoyed frozen or thawed. They store great in a ziplock bag for a bite-sized treat when you're craving cheesecake!
Prepare the crust. Crush the vanilla wafers, add the melted butter and mix well. Divide into mini muffin tins or pour into a 9x9 baking pan. Press firmly.
2 cups crushed gluten-free vanilla wafers, 1/2 cup butter, melted
⭐️Blend the cheesecake mixture. Add cream cheese, dry lemon pudding mix, milk, and vanilla to a large bowl. Using a hand mixer or stand mixer, mix until well blended, about 2 minutes.
Add cheesecake to crust. Add cheesecake mixture to mini muffin tin crusts or on top of the crust in the pan. If adding cherry pie filling, place a few dabs of filling onto the cheesecake and use a knife to gently spread.

Freeze. Freeze for 2 hours. Use a plastic knife to pop the cheesecake out from the muffin tin or go around the baking pan with a plastic knife and gently it will release from the pan. Slice with a pizza cutter or large knife into bite-sized pieces.

If left out they will thaw within 30 minutes.
