How To Make the Best Crockpot Hamburger Soup
Add the ground beef to a hot skillet, breaking it apart with a spoon or spatula as it cooks. Let it cook for a few minutes, stirring occasionally, until the beef turns brown and is fully cooked through. We recommend a lean ground beef such as 90/10; however, if opting for a 70/30 or 80/20 then drain off any excess fat.
Once cooked, add to the bottom of the slow cooker.
Add the diced tomatoes, tomato sauce, potatoes, beef broth, mixed vegetables, mustard, ketchup, salt, Italian seasoning, onion powder, and garlic powder. Stir well.
Cover the slow cooker and cook on high for 3-4 hours or low for 6-8 hours.
Serve hot garnished with shredded cheese if desired.
Recipe Notes and Variations
- Swap the ground beef with ground chicken, turkey or pork for a leaner option.
- Turn into a spicy soup by using half ground beef and half spicy sausage.
- Serve with jasmine rice, basmati rice, brown rice, quinoa or pasta to make it a heartier meal.
- Swap frozen vegetables with diced raw vegetables if you have the time to prep.
- Add 1/2 to 1 cup of beans (garbanzo, pinto, kidney or black beans) to increase the protein and fiber content of the soup.

Frequently Asked Questions
Yes, it is safe to put fresh ground beef in a slow cooker, but we would recommend browning it first. Browning the meat helps to enhance the flavor and texture. If you are in a hurry, you can add directly to the slow cooker or consider prepping the meat by cooking the night before.
Yes! After cooking the ground beef, add all ingredients to the pot and cook over medium heat until potatoes are fork tender. Stir occasionally.
The best potatoes are starchy varieties like Russet when looking for it to add a creamy texture to the soup. If you prefer potatoes that hold their shape and add a chunkier texture, Yukon Gold or red potatoes are ideal. You can also swap for sweet potatoes or butternut squash for a different flavor and texture.
Storing Soup
Not only is this easy crockpot hamburger soup great for busy times but it can also be prepped in advance. Making a full batch allows you to serve for dinner then store the leftovers either in the fridge or freezer.
Fridge: For the fridge, store in a container once completely cooled for up to 3 days. Kids can pack in a thermos for school, parents can enjoy as a work from home lunch, or it can be reheated for dinner.
Freezer: For a freezer meal, portion into shallow containers to easily reheat individual servings or toss into a large container for a bulk portion. A freezer friendly tip for soup is pouring it into a Ziploc bag (once cooled) then storing flat in the freezer. This will save you space.
Reheating Soup
From the fridge, reheat in a microwave safe bowl in 30-second increments. You can also toss in a pot over medium heat until hot. Thaw frozen soup in the fridge overnight or pour into a pot over medium heat to quickly bring up to temperature.
