You can also view this recipe as a simplified version of stuffed peppers. It’s wonderful to have the option to prepare the ingredients in advance and simply place everything into the slow cooker.
This method is much more convenient than assembling individual stuffed peppers, only to discover that your children are only eating the filling from the center.

Tips and Tricks
- Choose High-Quality Sausage: Opt for high-quality pork sausage with your preferred level of spiciness. The quality of the sausage will greatly affect the flavor of the soup.
- Sauté the Onions and Garlic: Sautéing the onions and garlic before adding them to the slow cooker enhances their flavor. Cook them until they become fragrant and translucent.
- Use Fresh Herbs: If possible, use fresh basil instead of dried basil for a more vibrant and fresh flavor. You can add it towards the end of the cooking time for maximum impact.
- Adjust Seasonings: Taste the soup before serving and adjust the salt and pepper to your liking. Remember, you can always add more seasoning if needed, but you can’t take it out if you add too much.
- Precooked Rice: Using precooked rice saves time, but you can also cook rice separately and add it to individual bowls when serving if you prefer. This prevents the rice from becoming too mushy if there are leftovers.
- Customize with Toppings: Consider adding some toppings when serving, such as shredded cheese, chopped fresh herbs, or a dollop of sour cream. These extras can take your soup to the next level.
- Make It Ahead: This soup can be prepared ahead of time and reheated when you’re ready to eat. In fact, many soups, including this one, often taste even better the next day as the flavors meld together.
- Experiment with Peppers: While the recipe calls for bell peppers, feel free to experiment with different types of peppers to adjust the flavor and heat level to your preference. Red, yellow, and green bell peppers offer different flavor profiles.
- Consider Batch Cooking: If you have a large slow cooker, consider doubling the recipe and freezing the extra servings for busy days when you don’t have time to cook.

Cooking tips and suggestions for kids making this recipe.
- Translucent means the onions will turn almost clear (versus white). Onions will also start to smell sweet as they are sauteed.
- “Cooking until browned” means to cook meat until there is no pink. Chopping into small chunks, letting simmer, stirring then repeating until fully cooked is the best method for browning meat.
- You can use instant rice or cook rice from scratch.
