Instructions
⭐️Prepare the chicken breasts. Place chicken breasts onto one sheet of parchment paper. Carefully slice them in half horizontally so you have 4 chicken breast pieces. Place another sheet of parchment paper on top. Use a kitchen mallet to pound the chicken breasts thin.
2 large chicken breasts
Roll the chicken breasts. Add 1 ham slice and 1 cheese slice to each chicken breast. Roll starting at the narrowest end.
4 slices ham, 4 slices provolone or swiss cheese
Prep the coatings. In a shallow bowl combine the flour, salt, and pepper. In another bowl whisk together 1 egg with 1 tablespoon of water. In the third bowl combine the breadcrumbs, basil, and oregano.
1/3 cup gluten-free flour, 1/2 teaspoon salt, 1/4 teaspoon pepper, 1 large egg + 1 tablespoon water, 3/4 cup gluten-free breadcrumbs, 1 teaspoon basil, 1 teaspoon oregano
⭐️Coat the chicken. Place one rolled chicken breast carefully in the flour mixture, rolling to cover the whole thing. Place into the egg wash and roll to cover all sides. Place into the breadcrumbs and coat, gently pressing the breadcrumbs into the chicken. Place onto the wire rack of the air fryer. Repeat for all of the chicken. Spray the tops of the breaded chicken with avocado oil or another high-heat cooking spray.
