Our dairy-free breakfast casserole is a hearty breakfast that's perfect for holidays, weekends away, or simply as breakfast during the week. Made with hashbrowns, seasoned pork sausage, and spinach, this casserole is flavor-packed. Gluten-free.

1/2cupsoy milk✅
1 teaspoondry mustard✅

Instructions
Preheat the oven. Preheat the oven to 400°F. Prep the baking pan with nonstick cooking spray.
⭐️Brown the sausage. In a large skillet brown the pork sausage with the onions and garlic. Once cooked add the spinach, stirring occasionally until it wilts. You can add the spinach in bunches if needed for room.

Blend the egg mixture. In a large bowl whisk together the eggs, soy milk, dry mustard, salt, and pepper.
10 large eggs, 1/2 cup soy milk, 1 teaspoon dry mustard, 1 teaspoon salt, 1/2 teaspoon pepper
Layer the casserole. Add the hashbrowns to the prepared pan. Spread the pork sausage mixture on top of the potatoes. Pour the egg mixture over the casserole.
20 ounces frozen diced hashbrowns
⭐️Bake. Bake for 35-40 minutes or until the eggs are cooked through. Serve hot.

Mix-ins: Casseroles are a great way to use up any veggies you may have left in the fridge from the week. After sauteing the onions (prior to adding the spinach), toss in any desired vegetables such as bell peppers, mushrooms, grape tomatoes, jalapenos or broccoli florets.Make-Ahead: Assemble the casserole the night before then bake in the morning. You will wait to mix together and pour the egg mixture on top of the layered casserole until right before baking.
