How To Make
Preheat the oven to 400°F. Prep the baking pan with nonstick cooking spray.
Brown the sausage
In a large skillet brown the pork sausage with the onions and garlic. Once cooked add the spinach, stirring occasionally until it wilts.
Pro Tip: You can add the spinach in bunches if needed for room. As the first bunch cooks and frees up room in the pan, add another handful.
Blend the egg mixture
In a large bowl whisk together the eggs, soy milk, dry mustard, salt, and pepper.
Layer the egg casserole
Add the hashbrowns to the prepared pan. Spread the pork sausage mixture on top of the potatoes. Pour the egg mixture over the casserole.
Bake
Bake for 35-40 minutes or until the eggs are cooked through. Serve hot.
