Greek boneless skinless chicken thighs are flavor packed with garlic, kalamata olives and a creamy Greek yogurt sauce served over your favorite rice blend. Gluten-free.
Make the marinade. Place the yogurt, olive oil, lemon juice, garlic, oregano, salt, and pepper in a mixing bowl. Whisk.
1/3 cup full-fat Greek yogurt, 1/4 cup olive oil, 1 medium lemon, juiced, 4 cloves garlic, minced, 1 teaspoon oregano, 1 teaspoon salt, 1/2 teaspoon pepper
Marinade the chicken thighs. Place the chicken thighs in a shallow pan. Add the marinade, mixing with a tongs to coat the whole thigh. Let sit for 30 minutes.
1 pound boneless skinless chicken thighs
Preheat the oven. Preheat the oven to 400°F.
⭐️Cook the chicken. Using a tongs remove the chicken thighs from the marinade. Place them into an oven-safe skillet. Add the kalamata olives and lemon slices if desired. Bake for 30-40 minutes or until the internal temperature hits 165°F.

Serve. Serve as is or on top of your favorite rice or quinoa blend.
Notes
If kalamatas aren't your thing or you have kids refusing to eat olives, omit or swap with cherry tomatoes.
Turn dairy free by swapping the Greek yogurt with a dairy free yogurt.
Use another cut of chicken such as chicken breasts, tenders or drumsticks. Adjust cooking time as needed.
Squeeze fresh lemon juice over the thighs before serving to elevate the flavor even more.
Opt for bone-in skin-in chicken thighs if preferred. Adjust cooking time as needed.
Thaw frozen chicken thighs in the fridge overnight or by running under cool continuous water in the sink then use for this recipe.
Use a stainless steel skillet or cast iron pan.
