Our shrimp orzo salad features feta cheese, dill, orzo, shrimp, cucumbers, kalamata olives, and artichoke hearts with a red wine vinegar dressing that is perfect for the spring and summer months. Gluten-free.
1cupgluten-free orzo, cooked per package instructions
14ouncescan artichoke heart pieces, drained✅
8ouncescooked shrimp✅
1smallcucumber, peeled and diced
15- 20pitted kalamata olives, sliced
1/2cupfeta cheese✅
1mediumlemon, juiced
Dressing
1/4cupolive oil
3tbsp.red wine vinegar✅
2tbsp.fresh dillchopped
1tsp.minced garlic
1tsp.salt
1/2tsp.pepper
Instructions
Blend the orzo and vegtables. Place orzo into a mixing bowl. Add cucumber, artichoke hearts, olives, shrimp, feta cheese, and lemon juice. Set aside.
Make the dressing. In a small mixing bowl, combine olive oil, red wine vinegar, garlic, dill, salt, and pepper. Blend well.
Combine. Pour dressing over pasta and mix.
Serve. Serve right away or refrigerate for later use.
