Healthy Cheesy Potatoes are a healthy and delicious side dish that will satisfy your craving for comfort food. This recipe takes classic cheesy potatoes and gives them a nutritious twist by swapping out butter for protein-packed Greek yogurt. The result is a creamy and flavorful dish that is much lower in fat and calories than traditional recipes.
Preheat the oven and prep the baking pan. Preheat oven to 350 degrees. Spray the baking pan with non-stick cooking spray.
Combine the ingredients. In a large mixing bowl, combine all of the ingredients, leaving half of the cheese for later.
30 ounce bag shredded hash browns, 8 ounce bag shredded sharp cheddar cheese, divided, 1 cup plain Greek yogurt, 3/4 cup 1 % milk, 3/4 cup chicken broth, 3 ounce reduced fat cream cheese, 1 teaspoon minced garlic, 1 teaspoon salt, 1/4 teaspoon black pepper
Place into the baking pan. Spread into 9 x 13 baking pan. Top with the rest of the shredded cheddar cheese.
