Grandmas chicken casserole is a simple, hearty meal that kids love. Made with rotisserie or leftover chicken, frozen broccoli, gluten-free panko, and cheese it's a great family meal any day of the week.

Instructions
Preheat the oven. Preheat the oven to 350°F.
Mix the ingredients. In a medium-sized mixing bowl combine the chicken, cream of chicken soup, broccoli, garlic, basil, and garlic powder. Stir well then place into the baking dish.
Combine the panko and butter, add the cheese. In a small mixing bowl, combine the panko with the butter, stirring well. Spread on top of the chicken mixture. Sprinkle the cheese on top of the panko.
1 cup gluten-free panko, 4 tablespoons butter, melted, 1/2 cup mozzarella cheese
⭐️Bake. Bake for 30-35 minutes or until the casserole starts to bubble on the edges and the cheese is melted.
Notes
The broccoli could be swapped with frozen carrots, green beans, cauliflower, asparagus or zucchini.
Crushed gluten-free crackers or potato chips are alternatives to panko. Keep in mind the flavor and texture of the dish could be altered with any ingredient swap.
This casserole will keep great in the freezer. Simply assemble as written then cover with tin foil (either baked or unbaked) and store in the freezer for up to 3 months. To reheat, let thaw in the fridge overnight then uncover and bake at 350°F for 30 minutes or until the internal temperature is 165°F.
