Combine the flour mix. To a large flat bottomed bowl or pan whisk together the flour, cornstarch, 2 teaspoons seasoned salt, 1 teaspoon pepper, garlic powder, onion powder, and paprika.
Pat the chicken dry and coat. Pat each chicken leg quarter with a paper towel before placing it into the flour mixture. Coat in flour, shaking off the extra. Place chicken into the egg mixture. Coat well letting the extra drip off. Coat again in the flour mix and the egg mix. Place onto a baking pan with a wire rack. Repeat for all the chicken.

⭐️Heat the oil. Preheat the oven to 350°F.Place the Crisco into a large stockpot. Bring the oil to 350°F. Proper temperature is very important, make sure to use a thermometer.

⭐️Fry the chicken. Carefully place 2 chicken quarters into the oil. The oil temperature will come down. Keep the oil temperature between 300-325°. Cook the chicken quarters for 20 minutes, flipping often to avoid the coating from getting too brown. Once the time is up, check the internal temperature of the chicken, it should be 165°F. If it's not quite there, continue frying or place the chicken into the oven to finish baking. Repeat with the next chicken quarters. Keep the chicken first hot in a warm oven.
