Gluten free butternut ravioli is easier to make at home than you may think. Our version uses nondairy cream cheese and plenty of garlic for a delicious ravioli that everyone will love.
Add the eggs and olive oil. Add the olive oil and eggs to the dry ingredients. Stir until it becomes difficult to stir, then kneed the dough with clean hands until well blended. Add a tablespoon of water if the dough is too dry.
4 large eggs, 2 tablespoons olive oil, 1-2 tablespoons water, if needed
⭐️Roll the pasta flat. Place the dough between two pieces of parchment paper and roll flat. It's important to roll the dough very thin. Use the biscuit cutter to cut the dough into circles and place it onto the baking tray. You can also cut squares with a pizza cutter if needed. Reroll the extra dough.
Butternut Squash Filling
⭐️Blend the ingredients. Add the warm butternut squash to the food processor. Add the cream cheese, garlic, olive oil, and salt. Puree.
1 1/2 cup butternut squash, cooked and mashed, 1/4 cup dairy free cream cheese, 1 large clove garlic, 1 tablespoon olive oil, 1/2 teaspoon coarse salt
Fill the Ravioli
Fill the cut ravioli. Using 2 small spoons, place about 1-2 teaspoons of filling on top of half of the ravioli cut outs. Place the other half of the cut pasta on top of the filling. Use a fork to seal the edges.
⭐️Cook the ravioli. Place the ravioli into boiling water. Cook for 2 minutes and remove with a slotted spoon.
Serve. Serve immediately with marinara or olive oil and basil.

Yes! You will want to freeze the raviolis before cooking. After sealing with a fork, toss in alabeledair-tight bag for up to 3 months in the freezer. When ready to eat, place in a pot of boiling water for 4 minutes.
Adjust the amount of xanthan gum according to package instructions if you opt to use gluten free flour blend that does not contain xanthan gum as an ingredient.
