If you have a hard time finding gluten free cream of chicken soup, this is a fast and simple alternative. Made with just 3 ingredients + spices including chicken stock and soy milk. It's a dairy free cream of chicken soup that's made with pantry staples.
Heat the chicken stock with the cornstarch. In a saucepan over medium-high heat, whisk together the chicken stock, cornstarch, poultry seasoning, salt, and pepper. Continue to whisk until it starts to thicken.
Add the soy milk. Slowly whisk in the soy milk. Continue to mix until thickened to your desired consistency.
3/4 cup plain soy milk
Serve. Use in recipes, serve as is, or add chicken and vegetables for a simple soup.
Notes
It can be stored in a mason jar or airtight container in the fridge to use as desired for up to 1 week.
To freeze, let cool completely then store in a large Ziploc bag or freezer safe container. Thaw overnight in the fridge.
