These easy gluten-free pumpkin pancakes are a light and fluffy pancake that's the perfect fall breakfast that kids love! Packed with pumpkin puree, pumpkin pie spices, and gluten-free flour these are a must try recipe.
1 1/2cupgluten free all purpose flourWe use Cup4Cup mulitpurpose flour
1 1/2teaspoonsbaking soda✅
1teaspoonpumpkin pie seasoning✅
1/2teaspoon salt
1 1/2cupsmilk
1/2cup pumpkin puree (not pumpkin pie filling)✅
1 largeegg
2tablespoonsoil
2tablespoonsbrown sugar
1 teaspoonpure vanilla extract✅

Instructions
⭐️Preheat your griddle. Preheat the griddle to 350°F or heat a pan over the stove.
Combine the dry ingredients. In a small bowl whisk together the flour, baking soda, pumpkin pie seasoning, and salt. Set aside.

Combine the wet ingredients. In a medium sized bowl with a spout, combine the milk, pumpkin puree, egg, oil, brown sugar, and vanilla. Add the dry ingredients to the wet ingredients. Stir only until just combined.

⭐️Cook. Using the pour spout or a 1/4 cup measuring cup, pour pancake batter onto hot griddle. Cook for about 2-4 minutes per side, flipping the pancakes when the edges start to cook and the center of the pancake batter is bubbly. Serve with syrup and butter.
