Our banana bread with applesauce has a crunchy crust and super moist center, it will become your go to recipe. This healthier version is made by swapping oil for applesauce. It's gluten-free and dairy-free.
Preheat the oven. Preheat the oven to 425°F. Spray the loaf pan with nonstick cooking spray.
Mix the wet ingredients. In a large bowl, combine brown sugar, granulated sugar, applesauce, eggs, and almond extract.
3/4 cup brown sugar, 1/2 cup granulated sugar, 1/2 cup unsweetened applesauce, 2 large eggs, 1 teaspoon almond extract
Mix the dry ingredients. In a medium-sized mixing bowl, whisk together the flour, baking soda, and salt.
2 1/4 cup gluten-free all purpose flour, 1 teaspoon baking soda, 1 teaspoon salt
Add the dry ingredients to the wet and add banana. Pour the dry ingredients into the wet ingredients and gently mix until almost combined. Add the mashed bananas and mix until just blended.
3 medium overripe bananas, mashed
⭐️Add batter to pan and bake. Add the batter to the prepared pan. Bake at 425°F for 12-14 minutes (until a crust starts forming around the outside of the bread), then turn the temperature down to 350° and cook for 30-40 minutes or until a toothpick inserted into the center comes out clean.
Notes
The outside of the bread will be very dark. It helps add that extra crisp crust on the outside and moist texture on the inside.
