⭐️Saute vegetables. Heat oil to a medium-sized skillet. When the oil is hot add onions and carrots, cook until onions are translucent. Add garlic and cook an additional minute. Stir in spinach.
Blend the sauce together. In a small bowl combine yogurt, parmesan cheese, mayo, and salt.
⭐️Combine sauce and vegetables. Add the yogurt sauce to the sauteed vegetables. Stir well and heat until warmed.
Serve. Serve with gluten-free crackers or a variety of veggies.
