Combine ingredients. Add all ingredients, except the cheese, into the crockpot or slow cooker.
1 pound chicken breasts, 2 cups dry quinoa, 28 ounces diced tomatoes, 14 ounces enchilada sauce, 1 cup water, 15 ounces black beans, 15 ounces corn kernels, drained, 4 ounces diced green chilies, 1 medium onion, diced, 1 tablespoon chili powder, 1 tablespoon cumin, 1 teaspoon garlic powder, 1 teaspoon salt
Cook. Cook on high for 2-3 hours or low for 6-8 hours.
