Beef Enchilada Casserole is a delicious and comforting dish that's perfect for a cozy family dinner or for entertaining guests. This easy-to-make casserole is made with creamy ground beef, soft tortillas, and a rich and flavorful enchilada sauce.
Preheat the oven and prep the pan. Preheat the oven to 350°F. Spray the baking pan with nonstick cooking spray.
⭐️Brown the beef. Add the onion and ground beef to a skillet. Cook until the meat is browned. Drain the grease.

Blend the beef mixture. In a mixing bowl add the beans, cream cheese, chilies, and garlic powder. Use a potato masher to mash the beans and combine the mixture. Add the cooked beef and stir.

Add the meat to the tortillas. Add the meat mixture to a tortilla and gently roll. Place into the pan seam side down. Repeat until all the meat and tortillas are used.

⭐️Prep the sauce. To a large skillet add the enchilada sauce, greek yogurt, 1/2 cup shredded cheese, cumin, and salt. Heat over medium heat whisking until the cheese is melted. Pour over the enchiladas in the pan and top with the rest of the shredded cheese.

⭐️Bake. Bake for 30 minutes or until the cheese is bubbly.
Serve. Serve hot topped with your favorite toppings such as cilantro or avocado slices.
Notes
Both corn and flour tortillas work great for enchiladas. Warm between two damp paper towels first to make it easier to fold.
Follow the recipe as written to make a homemade red enchilada sauce or opt to use a red or green canned enchilada sauce.
Mix in a can of corn into the enchilada mixture for a pop of color.
Stick with sharp cheddar cheese or swap with shredded mild cheddar, Colby jack or a Mexican-style cheese. For more flavor, toss the shredded cheese with 1-2 tablespoons of taco seasoning before incorporating into the enchilada.
Make vegetarian by replacing the ground beef with a can of black beans or refried beans.
