Chex peanut butter bars are a midwest staple. Also known as scotcharoos, these bars are packed with peanut butter and made with crushed Rice Chex rather than crispy rice cereal making them gluten free. Topped with melted chocolate and butterscotch chips makes them a family favorite!
⭐️Boil the sugar mixture. In a large saucepan over medium heat combine the sugar, Karo syrup, and peanut butter. Stir continually until the mixture just comes to a full boil.
1.5 cup peanut butter, 1 cup light Karo syrup, 1 cup granulated sugar
Prep the pan and the Chex. Spray the pan with nonstick cooking spray. Add Rice Chex to a large mixing bowl, set aside.
6 cups Rice or Corn Chex, crushed
⭐️Combine and add to the pan. Pour the peanut butter mixture over the Chex and blend well.
⭐️Melt the chocolate and butterscotch chips. Add the chocolate chips and butterscotch chips to a medium sized saucepan. Heat over low heat, stirring continually until melted. Pour over the peanut butter bars.
1 cup semi sweet chocolate chips, 1 cup butterscotch chips
Chill. Let the bars sit until the chocolate hardens. To speed up, place into the refrigerator.

Tips
Store in the fridge up to 2 weeks or in the freezer for up to 3 months.
Add an extra crunch by topping with chopped peanuts or mini chocolate chips before the chocolate layer hardens.
Prevent the sugar mixture from cooking too longer by removing from the heat as soon as it starts to boil.
Use Rice Chex, Corn Chex or a combination.
