Roasted broccoli and carrots are a simple flavor-packed side dish that kids love! We use simple seasonings and top with freshly shredded parmesan cheese. Gluten-free.
12ouncesbroccoli florets, broken into small pieces
2tablespoonsolive oil
salt and pepper to taste
1/4cupfreshly shredded parmesan cheese✅
Instructions
Preheat the oven and prep the pan. Preheat the oven to 400°F and line the baking pan with parchment paper.
Layer the veggies. Spread the sliced carrots onto the pan in a single layer. Add the broccoli on top. Drizzle with olive oil and sprinkle with salt and pepper.
4-5 large carrots, peeled and sliced thinly, 12 ounces broccoli florets, broken into small pieces, 2 tablespoons olive oil, salt and pepper to taste
⭐️Bake. Bake for 15-18 minutes or until the broccoli starts turning golden brown.
Serve. Sprinkle with parmesan cheese and gently stir. Serve hot.

Seasonings Suggestions
Salt, pepper, ginger, garlic, onion, or chili powder.
Store in the fridge for up to 3 days then reheat when desired by microwaving in increments or placing back into a preheated oven until hot.
