Air fryer potato skins are a simple and delicious appetizer that's perfect for game days or parties. Cooked potatoes are cut in half, the flesh is scooped out, it's brushed with oil, air fried, then cheese is added and melted. We topped with sour cream, guacamole, and red pepper flakes but you swap for your favorite toppings. Gluten-free.

Instructions
Prep the potatoes. Cut the potatoes in half lengthwise and scoop out the middle, leaving enough flesh on the outside for structure. Brush the inside of the potatoes with olive oil and sprinkle with salt and pepper.
6 small potatoes, baked, 1-2 tablespoons olive oil, salt and pepper to taste
⭐️ Air Fry. Preheat your air fryer to 400°F. Cook for 6 minutes or until they just start to turn golden brown. Carefully remove and sprinkle with shredded cheese. Cook for an additional 2 minutes or until the cheese is melted.

Serve. Serve topped with sour cream, guacamole, crushed red pepper flakes, or your favorite toppings. Serve hot.

Storage Instructions
Placed cooled potatoes in the fridge for up to 4 days Freeze leftovers by placing the cooled potatoes in a freezer Ziploc bag or container, labeling and freezing for up to 3 months.
Reheating Instructions
Reheat by placing back into a preheated air fryer, under the broiler or in the microwave.
Topping Suggestions
Sauce - drizzle with buffalo, barbecue, ranch, thousand island or your family's favorite dressing
Taco - top with taco meat, cheese, black olives, sour cream and guacamole
Pork - add pulled pork along with the cheese all drizzled with bbq sauce
Chicken - shredded chicken plus bacon bits, ranch and green onions
Vegetarian - add roasted broccoli and cauliflower then drizzle withcheese sauce
