Instructions
Preheat the oven. Preheat the oven to 350°F.
⭐️Blend the wet ingredients. To the mixer bowl add the sugar and butter. Whip until light and fluffy. Add the egg and vanilla and blend until well combined.

⭐️Add the dry ingredients. Add the gluten-free flour, almond flour, baking powder, and salt. Mix until blended.

Chill. Chill the dough for 30 minutes.
⭐️Bake. Using a cookie scoop or 2 spoons, divide the cookies onto the baking sheets. Bake for 10-11 minutes or until the edges start turning golden brown. Let cool for 5 minutes before moving to a wire cooling rack to cool all the way.

How To Freeze
Freezing gluten-free cookies is hands down one of the simplest ways to always be prepared when in a pinch. Perfect to pack when kids are headed to a birthday party, field trip, slumber party or any other occasion without celiac-safe options. These cookies can be frozen once completely cooled in a Ziploc bag or container for up to 3 months. Thaw overnight or microwave for 15 seconds before serving.

If not freezing, uniced cookies can be stored at room temperature for up to 5 days in an airtight container.
