Our dairy-free rice pudding recipe tastes just like the rice pudding of your childhood! Flavored with plenty of vanilla, cinnamon, and a touch of nutmeg, you'll love the rich creaminess of this delicious dessert. Gluten-free.
⭐️Bring the soy milk to a boil. To a large stockpot add the soy milk, granulated sugar, rice, and salt. Bring to a boil then turn down to low.
5 1/2 cups soy milk, 1/2 cup granulated sugar, 1/2 cup long-grain rice (uncooked), 1/2 teaspoon salt
⭐️Simmer. Simmer the mixture for 50-60 minutes stirring often. A thin layer will develop on top as it cooks, but will stir in.
⭐️Add the spices. Once the mixture is nearly thickened, whisk in the vanilla, cinnamon, and nutmeg. Add the egg. Whisk over medium heat for about 2 minutes.
Serve. Serve the rice pudding hot. Garnish with your favorite toppings.
