Our baked gluten free chicken parmesan is crisp on the outside, tender on the inside, and cuts calories and fat as compared to the fried versions. Made with gluten-free breadcrumbs and plenty of marinara and cheese, this is a family favorite!
Preheat the oven. Preheat the oven to 400°F. Line your baking sheet with tin foil. Spray with nonstick cooking spray.
Divide the flour, breadcrumbs, and egg into flat-bottomed bowls. Add the flour, salt, and pepper to one flat bottomed bowl, stir together. Add the egg to the next bowl, whisk with a fork. Add the breadcrumbs and Italian seasonings to the third bowl, mix well.

Prepare the chicken. Cut the chicken breasts in half horizontally, making 2 cutlets. Place them onto a large piece of plastic wrap and cover with another piece of plastic wrap. Use the mallet to pound the chicken into evenly-sized flattened pieces.

Coat the chicken. Start by coating the chicken into the flour (shake off extra), dip into the egg (let the extra drip off), then coat in the breadcrumb mixture (press into the chicken, then shake extra off). Place onto the tin foil-lined baking pan and repeat until all the chicken is coated. Spray the breaded chicken with nonstick cooking spray.
Bake. Bake the chicken for 10 -15 minutes or until the internal temperature hits 165°F.
Broil. Preheat the broiler. Pour the marinara onto the cooked chicken. Top with a slice of cheese. Place under the broiler (make sure rack is about halfway down in the oven - not too close to the broiler). Broil for 3-4 minutes or until the cheese is melted.

Serve. Serve the chicken as is or serve over a bed of pasta.

Tips

Other gluten-free ingredients such as crushed gf crackers, potato chips, cereal, or a multipurpose flour blend can be used instead of breadcrumbs if preferred. Note that any ingredient substitute may alter the texture and taste of the final product.
Make dairy-free by omitting the cheese or opt for a dairy-free alternative.
Store in an air-tight container for up to 3 days in the fridge. Reheat in the microwave in increments of 15 seconds until hot.
All chicken dishes should be cooked until the internal temperature of the chicken reaches 165°F. The best method of checking the temperature is by inserting a meat thermometer into the thickest section of the chicken.
