If you have a hard time finding gluten free cream of chicken soup, this is a fast and simple alternative. Made with just 3 ingredients + spices including chicken stock and soy milk. It's a dairy free cream of chicken soup that's made with pantry staples.
⭐️Heat the chicken stock with the cornstarch. In a saucepan over medium-high heat, whisk together the chicken stock, cornstarch, poultry seasoning, salt, and pepper. Continue to whisk until it starts to thicken.
⭐️Add the soy milk. Slowly whisk in the soy milk. Continue to mix until thickened to your desired consistency.
3/4 cup plain soy milk
Serve. Use in recipes, serve as is, or add chicken and vegetables for a simple soup.
Notes
It can be stored in a mason jar or airtight container in the fridge to use as desired for up to 1 week.
To freeze, let cool completely then store in a large Ziploc bag or freezer safe container. Thaw overnight in the fridge.
