Blend the ingredients together. In a medium sized mixing bowl, blend the flour, baking powder, salt, olive oil, and water together. Add an additional tablespoon of water one at a time if the dough is too thick. Blend well and form into a ball. Brush a little olive oil on top and refrigerate for at least 10 minutes.
2 cups gluten free flour, 3 1/2 teaspoons baking powder, 1 teaspoon salt, 2 tablespoons olive oil, plus extra, 3/4 cup warm water
Roll out the crust. Place the cold dough onto a piece of parchement paper. Place another piece on top and roll out into a circle. Makes 1 thick crust pizza or 2 thin crusts. Remove the top piece of parchment paper and flip the crust over onto the pizza stone or baking pan.
Parbake the crust. Turn down the oven to 375°F. Bake a thick crust for 12 minutes or a thin crust 8 minutes. Remove from the oven and top with sauce, cheese, and toppings. Bake for an additional 8 minutes or until the cheese is melted. Serve hot. For a more crisp crust, heat the pizza stone in the oven then carefully add the crust.
