This Vegetable Strata Recipe is one to keep handy all year. It can be served for breakfast, lunch or dinner any day of the week. It has shown up on my dinner table more than once over the last few months. As we head into the holiday season, this strata recipe is at the top of the list for recipes that I will be making for our family Christmas brunch. It is simple yet delicious - an ideal recipe for holiday entertaining. The colors of the veggies combined with the cheesy flavor and fluffy eggs makes this vegetable strata recipe impress any crowd.

My favorite part of this recipe is being able to make it ahead of time. You can definitely prep this recipe and bake right away. But, you can also prep it the day before.
Either way, start off by gathering the equipment and ingredients for the vegetable strata. Then, follow the step-by-step instructions.
Equipment
- small skillet
- spatula
- microwave-safe bowl with cover (or use a plate)
- 9×9 inch baking pan
- medium-sized bowl
- whisk
- measuring spoons
- measuring cups
Ingredients
- 1 small red onion, sliced
- 1 tablespoon olive oil
- 2 small Roma tomatoes, sliced
- 1 cup broccoli florets
- 6 slices french bread
- 5 large eggs
- 2 cups milk
- 2 cloves garlic, minced
- salt and pepper to taste
- 1/2 cup shredded cheddar cheese
Step 1: Preheat the oven and prepare the baking pan.
Preheat the oven to 350° F. Spray the baking pan with nonstick cooking spray.
Step 2. Sauté the onions.
In a small skillet over medium heat, sauté onions until caramelized.
How To Caramelize Onions
First things first, grab an onion. Any variety will do. I use a red onion for this recipe.
Heat 1 tablespoon of olive oil in a skillet. Once hot, add the sliced onion. You will know the olive oil is hot if it is shimmering. Stir the onions around the skillet until each slice is coated in the olive oil. Then, let the onions cook. Wait 5-6 minutes. Stir while scraping off any fond on the bottom of the skillet. Repeat for the next 10-15 minutes. Be careful not to cook the onions on high heat to prevent burning.
Step 3. Steam the broccoli.
While you wait for the onions to caramelize, steam the broccoli in the microwave.
How To Steam Broccoli in the Microwave
Place the broccoli florets into a microwave-safe dish. Cover with 1-2 tablespoons of water. Cook for 2-3 minutes or until bright green and softened.
Step 4. Whisk the egg mixture.
In a medium-sized mixing bowl add:
- eggs
- milk
- garlic
- salt
- pepper
Whisk until blended.
Step 5. Layer strata in baking pan.
Lay the bread on the bottom of the baking pan.
Top with steamed broccoli, sliced tomatoes, and sautéed onions.
Pour egg mixture over the vegetables.
MIX IT UP: Swap these veggies with your favorites or add more. Bell peppers, mushrooms, roasted red peppers and/or asparagus are all great additions or alternatives for a strata recipe.
Top with shredded cheese. With a spatula, gently push down to get the egg mixture covering most of the ingredients.
Bake. Bake for 50 minutes or until the eggs are set and the cheese is melted and bubbly. Serve hot.

Allowing a strata to sit overnight gives the bread time to soak up the egg mixture to create a puffy casserole once baked. If you decide to bake immediately, I can confirm that this vegetable strata recipe will turn out just as tasty.
