Description

A crispy kid-friendly taco recipe that will soon be your favorite.


Ingredients

  • 1 lb. ground turkey browned and drained
  • 15 oz. can refried beans
  • 15 oz. can diced tomatoes, drained
  • 3/4 cup shredded sharp cheddar cheese
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. cumin or chili powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. crushed red pepper flakes
  • 10  6-inch flour tortilla shells (fajita size)

Instructions

  1. Preheat oven to 375 degrees. Spray muffin tin with non-stick cooking spray.
  2. Brown meat, drain, and return to pan
  3. Stir in diced tomatoes, refried beans, and spices
  4. Fold flour tortillas to fit into muffin tins
  5. Divide meat mixture evenly between tortillas
  6. Top with cheese and desired toppings
  7. Bake 8-10 minutes or until shells are crispy and browned

Notes

Optional Toppings: Salsa, tomato, onion, black olives, cilantro, greek yogurt or sour cream

Note: Use 1 packet of taco seasoning to replace spices if desired.
