- 4 medium russet potatoes
- nonstick avocado cooking spray or other high heat oil
- coarsely ground salt
- fresh ground pepper

How To Make
Preheat the oven to 450°F and prep the pan by adding the wire rack.
Prep the potatoes
Wash the potatoes then dry them. Using a fork, poke holes into the top of the potato. Place onto the baking tray. Spray with the avocado oil and using your hands, spread the oil over the whole potato. Sprinkle with coarse salt.
Bake
Bake the potatoes for 40 minutes or until they give when squeezed (use clean oven mitts or a kitchen towel).
Serve

Total baking time will depend on your oven and the size of the russet potatoes. This recipe was developed with medium size potatoes. If large potatoes are selected, adjust the total time by approximately 10 minutes or cook until fork tender.
