Looking for easy RV meals this summer? These simple, no mess Egg and Cheese McMuffins make a great RV recipe or an easy camping breakfast. The eggs are baked in the oven on a gluten-free English muffin.
My family LOVES camping and it has become a tradition that we all look forward to during the summer. We all enjoy spending time together as a family in a tent with huge bonfires, tasty food, and funny jokes, some funnier than others. 😉

A few years ago, I decided that I was going to start making meals at home before we left for our trip because I hated missing out on all the fun. If you are like me, then making these Egg McMuffins in the oven and packing in a cooler is the way to go.
HOW TO MAKE
- Preheat oven to 350 degrees
- Prepare a 9×9 inch pan or baking sheet with baking spray
- Place bottoms of English muffins onto the pan
- Carefully crack one egg on top of each muffin bottom.
- Place into the preheated oven and cook for 20-25 minutes, or until eggs are cooked to your liking.
- When the eggs are almost done, place tops of English muffins onto the oven rack and let toast for 3-5 minutes.
- Remove pan from oven, place cheese on top, then the top of the muffin and serve.
This recipe can also be made over the campfire if preferred.
HOW TO MAKE OVER A CAMPFIRE
- Place grill top over the campfire
- Using tin foil, make 4 squares of tinfoil with the edges rolled up tightly.
- Spray tin foil with cooking spray and place English muffin onto the foil.
- Crack an egg onto the English muffin and carefully place foil pack onto the grill
- Cook until the egg is cooked to your liking, about 20 minutes.
- Place a clean sheet of foil onto grill top to toast muffin tops. Let muffin tops toast 3-5 minutes.
- Using oven mitts, carefully remove foil packs, place cheese and muffin top on top. Serve immediately.
PRO TIP: Crack eggs at home and transport in a plastic container with a tight lid.
For RV travel, fridge and freezer space is key – so planning and bringing as many non-refrigerated items as possible and filling in with refrigerated things is important.
Bring a cooler on the RV for extra freezer storage if needed. I like to freeze as much as I can so that it helps keep the cooler cold longer.
PRO TIP: Freeze water in empty milk jugs, it takes a lot longer to melt than ice.
TIPS FOR CAMPING
- HAVE A PLAN – know the length of the trip, location of the campsite and the amenities available so you can prepare
- PREMAKE MEALS – you will thank me when you are at the campsite because having everything prepped and ready to go allows you to spend more time with your family and friends.
- PRACTICE FOOD SAFETY – keep in mind that perishable food cannot be kept out in weather >90°F for more than one hour and in mild weather for more than two hours or the food will need to be thrown out
- PACK SUPPLIES – before you leave think about the supplies like can openers, utensils, plates, cookware, etc.
