Roasted Acorn Squash is easy to prepare and makes a healthy and nutritious vegetable side dish for any dinner recipe. A squash recipe for kids.
- 1 whole acorn squash
- 2 tbsp. olive oil
- salt and pepper to taste
- Preheat oven to 400 degrees.
- Carefully cut the acorn squash in half and scoop out seeds with a spoon. Slice into 1/2 inch slices.
- Place squash slices in large bowl and toss with olive oil. Arrange on baking sheet. Season with salt and pepper to taste.
- Bake for 20- 30 minutes or until a fork can easily pierce the middle of the slice of squash.
