One Pan Meals
The goal of this easy pork loin recipe was to create a one-pan meal.
We were able to chop the veggies, sear the meat, and cook both the meat and veggies in under 40 minutes. Should you choose to use pre-chopped veggies, this weeknight dinner is ready in under 30 minutes!

Ingredients
- 1 pork loin ✅ We used Smithfield Garlic & Herb Loin Filet which is labeled gluten-free
- 2 tablespoons Canola oil
- 5 large red potatoes, diced
- 2 medium sweet potatoes, diced
- 5 medium carrots, peeled
- 1 cup chicken broth ✅

Cooking Pork Loin
Remove pork loin from the refrigerator and let sit for 30 minutes. Allowing the meat to sit at room temperature makes it easier to sear.
Turn the instant pot to sauté
Heat high-heat oil in the instant pot. High heat oils have high smoke points (400 degrees F and higher) and include avocado oil, almond oil, corn oil, canola oil, grapeseed oil, peanut oil, safflower oil, sesame oil, and sunflower oil.
Pro Tip: In this case, olive oil has too low of a smoke point and should not be used when searing meat.
Once the oil is glistening in the pan, swirl it around, lightly covering the bottom of the pan. Place the Smithfield Garlic & Herb Loin Filet into the instant pot and sear for 3-4 minutes on each side. Don’t poke or prod the meat. Remove the pork loin from the instant pot and set it aside.
Deglaze the instant pot and add the vegetables
Add the chicken broth to the hot instant pot, scraping the bits off the bottom. Layer in the potatoes and carrots.
Place the pork loin on top then cook
Place the pork onto the vegetables then place the lid onto the instant pot. Turn to sealing. Cook at high pressure for 9 minutes.
Quick-release and rest
Once the time is up do a quick release then take the internal temperature to make sure it hits 145°F. Let the tenderloin rest for 10 minutes before slicing.
Kitchen Tip: Make sure to use a properly calibrated meat thermometer.

How To Make Reduction Sauce
- Whisk 3/4 cup white wine or chicken broth and boil until reduced by half
- Whisk 1 tablespoon of butter into the sauce
- Remove from heat, and serve
