- 1 pound lean ground beef

How To Make
Have homemade meatloaf and mashed potatoes on the dinner table in under an hour with this instant pot version. Gather the equipment and ingredients then follow the step-by-step instructions below.
Preheat the oven
Start by preheating the oven to 400°F.
Add potatoes to Instant Pot
Add the potatoes to the bottom of the instant pot. Then, place the wire rack on top of the potatoes and add the 1 cup of water. Set aside.
Combine the ingredients
In a large mixing bowl, combine the ground beef, pork, onion, red pepper, Ritz crackers, milk, ketchup, Worcestershire sauce, sage, and salt. Using clean hands, mix well until all the ingredients are combined.
Ingredient Swap: Use club crackers or breadcrumbs in place of the Ritz crackers if desired. Make this meatloaf gluten free by subbing the Ritz crackers with gluten-free crackers or breadcrumbs.
Form the meatloaf and place it into the instant pot
Next, create the aluminum foil pan by stacking 2 large pieces of tin foil on top of each other and placing the meat mixture in the center. Form the foil around the meat into a small rectangle shape. Then, place the formed meatloaf in the foil onto the wire rack in the instant pot. Place the lid on and turn to seal.
Cook
Set your instant pot to high pressure and cook for 35 minutes. Do a quick release once the time is up. Carefully remove the meatloaf and place it onto a baking sheet.
Add the topping
Using a pastry brush, spread ketchup lightly onto the top of the cooked meatloaf. Bake for 10 minutes.

Homemade Mashed Potatoes
While the meatloaf is baking, whip together the homemade mashed potatoes. Drain the liquid from the potatoes and add them to a medium-sized bowl. Add about 1/4 cup of milk and 1-2 tablespoons of butter, along with salt to taste, to the bowl. Mash while adding additional milk to get to your preferred consistency.
Frequently Asked Questions
You can use any ground meat such as turkey, chicken, pork or beef for meatloaf. Our recipe uses half lean ground beef and half ground pork, which can easily be substituted for 100% beef, pork or any other ground meat.
Higher starch potatoes such as Yukon Golds or Russets are the best potatoes to use for mashed potatoes as they are easily mashed to a creamy consistency.
It takes a 2lb meatloaf 35 minutes in the instant pot to cook completely. After baking, double check the internal temperature has reached 165°F before serving.
Follow the step-by-step instructions to make the meatloaf mixture and form into the tinfoil. Then, wrap in plastic wrap and store in the fridge until the next day. When ready to cook, add the potatoes and water to the bottom of the instant pot, remove the plastic wrap from the meatloaf and place the meatloaf in the tinfoil onto the wire rack in the instant pot.
