What meat do you use for French Dip?
I always use a rump roast, also known as bottom round oven roast or bottom round roast. A rump roast is a lean cut of meat that requires a long cooking time over relatively low heat. By using your Instant Pot or slow cooker to cook this rump roast, you will end up with tender meat for your French dips without the extra fat.

How To Make
- Place beef into the instant pot.
- Add beef broth, French onion soup, beer, and spices.
- Cook on high pressure for 1.5 hours.
- You can choose to do a natural release or turn to venting for a quick release.
- Remove any visible fat. Slice or shred.
- Turn on the broiler. Spread French rolls with butter or mayo if desired. Broil for 2-3 minutes or until the bread starts to brown.
- Serve meat on crusty rolls with an individual side dish of the au jus juice for dipping.
If cooking with a rump roast, there should be minimal fat to remove. However, it is important to remove any visible fat especially if shredding the meat – no one wants to bite into a chunk of fat.
INGREDIENT SWAP: Instead of spreading the French roll with butter or mayo, add a slice of cheese! The cheese will slowly melt under the broiler onto your French roll. Traditionally, a slice of provolone is the top favorite.

- Choose the Right Cut of Beef: The recipe calls for a 4-pound rump roast, but you can also use chuck roast or another suitable cut for slow cooking. Look for well-marbled meat as it will become tender and flavorful during the long cooking process.

- Cooking Time: When using an Instant Pot, cooking times can vary depending on the size and thickness of the meat. It’s essential to follow the recommended cooking time but be prepared for slight variations. The key is for the meat to become tender and easy to shred.
- Natural Release vs. Quick Release: The recipe gives you the option of doing a natural release or quick release in the Instant Pot. A natural release allows the pressure to drop slowly, which can help keep the meat tender. However, if you’re short on time, a quick release is acceptable.
- Shred the Meat: Once the cooking is complete, be sure to shred the meat and remove any visible fat as suggested. Shredding the beef will allow it to soak up more of the flavorful au jus.
- Broil the Rolls: To achieve a delicious crust on your rolls, set your oven’s broiler to high, and keep a close eye on them. They can go from brown to burnt quickly, so it’s important to monitor them closely.
- Serve with Au Jus: Don’t forget to serve the beef sandwiches with a side dish of the au jus juice for dipping. This is what makes the sandwiches truly special.

Yummy! I’ve never had French dip before and am so glad I tried it! I went with the slow cooker instructions and provolone in the sandwiches. I added a big salad on the side to get some greens in there. We definitely have enough leftovers to provide us with another meal this week. (This is so great, no cooking for me!)
