Preheat the oven to 350°F.
Cook the sausage
In a skillet add the sausage, onion, and pepper. Cook until the sausage is cooked through. Add the spinach and stir until wilted.
Mix the eggs
To a mixing bowl add the eggs, half and half, dry mustard, salt, pepper, and red pepper flakes. Whisk for at least 1 minute.
Layer the quiche
Add the shredded cheese to the bottom of the pie shell. Add the sausage mixture the pour the egg mixture on top.
