- 1 1/2 cup gluten free all purpose flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon pumpkin pie seasoning
- 1/2 teaspoon salt
- 1 1/2 cups milk
- 1/2 cup pumpkin puree (not pumpkin pie filling) check for gluten free
- 1 large egg
- 2 tablespoons oil
- 2 tablespoons brown sugar
- 1 teaspoon pure vanilla extract check for gluten free
- syrup and butter, (optional) check for gluten free
How To Make Pumpkin Pancakes
Preheat the griddle to 350°F or heat a pan over the stove.
Combine the dry ingredients
In a small bowl whisk together the flour, baking soda, pumpkin pie seasoning, and salt. Then, set aside.
Pumpkin pie seasoning is made up of 4 spices – cinnamon, cloves, ginger, and nutmeg. If in a pinch combine these spices to create your own homemade pumpkin pie spice. For our recipe, use 1/2 teaspoon of cinnamon, 1/4 teaspoon of ginger and nutmeg, and a 1/8 teaspoon of cloves.
Combine the wet ingredients
In a medium-sized bowl with a spout, combine the milk, canned pumpkin puree, egg, oil, brown sugar, and vanilla.
Add the dry ingredients to the wet ingredients then stir until just combined.
Cook
Using the pour spout, pour pancake batter onto the hot griddle. Cook for about 2-4 minutes per side.
Making homemade pancakes is a great opportunity for kids to learn when it is time to flip. Encourage your kids to watch for the edges to start to cook and the center of the pancake batter to bubble before flipping. As needed, help your kids carefully flip each pancake.
Once cooked, drizzle with syrup and butter or add your favorite pancake topping.

Fresh fruit such as bananas, strawberries, raspberries, or blueberries are always a great choice. For a sweeter pancake, top with powdered sugar, honey, or agave. Toasted chopped nuts are a tasty topping too.

- Use canned pumpkin puree, not pumpkin pie filling as the filling is pre-sweetened and seasoned.
- Instead of the pour spout, use a 1/4 cup measuring cup as a kid-friendly way to measure and pour the pancake batter onto the griddle.
- If spraying the griddle, double check the cooking spray is gluten-free as certain brands will add flour as an extra measure to prevent sticking.
- This recipe has been tested with Cup4Cup multipurpose flour blend; however, any gluten-free flour blend can be substituted. If xanthan gum is omitted as an ingredient in the blend, add it to the batter accordingly as it binds and thickens the pancake batter.
- Double-check the ingredient labels of the vanilla extract, pumpkin puree, and syrup before using to verify gluten-containing ingredients have not been added.
