Jiffy corn muffin mix was always a go-to as it was convenient to grab the box, add the milk and egg to then stir and bake. It was our inspiration to make a gluten-free muffin that was not only simple but used kitchen essentials!
While this recipe will walk you from start to finish to make homemade muffins, we are going to let you in on a little secret… the dry ingredients can be mixed together then stored in an airtight container or Ziploc bag at room temperature until ready to use. This way you can have a gf cornbread mix on hand at all times!

Preheat the oven to 400°F. Line the muffin tin with muffin liners or spray with non-stick cooking spray.
In a mixing bowl whisk together the sugar, eggs, soymilk, and oil. Set aside.
In a separate mixing bowl combine the flour, cornmeal, baking powder, and salt. Fold the dry ingredients into the wet ingredients.
Pro Tip: Combine the dry ingredients then store in a container or Ziploc bag for up to 3 months for a homemade gf cornbread mix.
Stir the creamed corn into the muffin mixture. Divide the batter between 12 muffins.
Bake for 20 minutes or until golden brown.
