How To Make Gluten-Free Ravioli
Bring water to a boil: Fill a large stock pot with water and bring to a boil.
Whisk the dry ingredients: In a large bowl combine the flour, xanthan gum, and salt.
Pro Tip: Adjust the amount of xanthan gum according to package instructions if you opt to use gluten free flour blend that does not contain xanthan gum as an ingredient.
Add the eggs and olive oil: Add the olive oil and eggs to the dry ingredients. Stir until it becomes difficult to stir, then kneed the dough with clean hands until well blended.
Pro Tip: Add a tablespoon of water if the dough is too dry then continue to kneed.
Roll the pasta flat: Use a pasta machine if you have one. You’ll be able to get the pasta rolled thinner.
If you don’t have a pasta machine, place the dough between two pieces of parchment paper and roll flat. It’s important to roll the dough very thin.
Use the biscuit cutter to cut the dough into circles and place it onto the baking tray. You can also cut squares with a pizza cutter if needed. Reroll the extra dough.
How To Make The Butternut Squash Filling
Blend the ingredients: Add the warm butternut squash to the food processor. Add the cream cheese, garlic, olive oil, and salt. Puree.
Fill the Ravioli: Using 2 small spoons, place about 1-2 teaspoons of filling on top of half of the ravioli cut-outs. Place the other half of the cut pasta on top of the filling. Use a fork to seal the edges.
Cook the ravioli: Place the ravioli into the boiling water. Cook for 2 minutes then remove with a slotted spoon.
Serve: Serve immediately with your favorite sauce.

Do you have to freeze raviolis right after you make them? In other words, you can’t cook them right after you prepare them unless they are frozen?
